April Recipes

Appetizer: Marla

Easy Appetizers:
Use New York style bagel crisps from Sams club for all three recipes.

Warm Bacon Cheddar dip

1 pkg cream cheese
2 C sharp cheddar cheese
6 bacon slices, cooked crisp and crumbled
2 T milk
1 green ion sliced
1 small tomato chopped

Heat and dip bagel crisps!


Bruschetta Bites

Buy Bruschetta from Sams Club! Quick, easy, and YUMMY.














Garden Chicken Salad Spread

Chicken cooked and cubed
2 large scoops miracle whip or mayo
Big scoop of ranch dressing
1-2 cucumbers diced
dill, salt and pepper to taste










Drink: Krsite
Chilled Fruit and Yogurt Smoothie

1/2 C strawberries, chopped
1/2 C blueberries
1/2 C raspberries
1/2 C blackberries
1 C orange juice
1/2 medium apple, peeled, chopped
6 oz Weight Watchers vanilla nonfat yogurt

Combine all ingredients in a food processor or blender, puree until smooth. Keep chilled until ready to serve. Yields about 1 1/2 cups per serving.




Salad: Angie
Pear and Pecan Salad

Hearts of Romain
1 C Pecans
1 C Feta cheese
1 pound crumbled bacon
3 pears

Dressing:
1 C red wine
1 C sugar
3/4 C oil
1 t dry mustard
1 t poppy seed
Salt and Pepper


Side: Kara
Greek Potato Salad

Cook 2 lbs red potatoes - cut in cubes

1 green bell pepper, cube
1/2 red onion
1 med cucumber
1/2 c olives
8 oz feta cheese
1/2 c Italian dressing
3 t lemon juice or zest

Mix - add salt and pepper to taste - chill




Main Dish: Kim
Lime Marinated Flank Steak with Pineapple Salsa

Marinate:
1/3 C olive oil
1T white vinegar
2 T honey
2 T Soy sauce
2 limes juiced
1 garlic clove, minced
1 t kosher salt
black pepper


Put all the ingredients in plastic bag and marinate Flank steak in it over night. Grill to medium rare or how you like your meat done.

Salsa:
1 can of pineapple tidbits
2 Jalapenos, minced
1 lime juiced
1 t kosher salt
1 bunch cilantro, chopped
1/2 red onion diced
1/4 t chili powder


Dessert: Desiree
Applesauce Cake W/ Penuche Frosting

2 1/2 C Flour
1 2/3 C sugar
1 1/2 t soda
1 1/2 t salt
1/4 t baking powder
1 t cinnamon
1/2 t allspice
1 1/2 C apple sauce
1/2 C water
1/2 C butter
2 eggs
1 t vanilla

Preheat oven to 350. Measure all ingredients into large mixing bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed. pour into greased cookie sheet. Bake for about 25 minutes or when it is golden brown and starts to pull away from the sides of the pan.

Frosting:

3/4 C butter
1 1/2 C brown sugar, packed
2 T corn syrup
dash of salt
1/3 C canned milk
1-2 t vanilla
3 C powdered sugar

Melt butter in saucepan. Stir in the brown sugar, corn syrup and salt. Heat to boil, stirring constantly. Boil and stir over low heat for 2 min. Stir in milk, heat to boiling. Remove from heat and cool to luke warm. Then stir in powdered sugar and vanilla. Beat until spreading consistency.

Carmel Apples

CARMEL APPLES


2 Cups Sugar
2 Cups Karo Syrup
3 Cups Cream
1/2 Can of Sweetened Condensed Milk
1 t Vanilla


Combine milk and cream in bowl. Microwave until warm.
In sauce pan bring Karo and sugar to a boil. Keep boiling until you can pull into threads. Then slowly add Cream mixture, trying to keep boiling. Reduce heat, but keep boiling until Carmel is to soft ball stage... This takes quite awhile, so just keep stirring. Remove from heat, and add vanilla. Dip apples!!
We like to add white chocolate and cinnamon and sugar to ours.
